Golden Tofu Tacos

I got this idea when my parents were making fish tacos one night.  I just substituted the fried fish for some fried tofu.  Mmmm mmmm…

One recipe for Golden Star Tofu (from my 8/29/13 post)

About 2 cups coleslaw:
1 1/2 cups shredded cabbage (mix green and red)
1/2 cup mix of shredded carrot and beet (or all carrot if you prefer)
1/3 cup vegan mayo (Veganaise is my fav)
1 t dijon mustard
1 t lemon juice
1/2 T sugar
1 t salt
1/2 t pepper
1 T olive oil
1/2 t paprika
1/4 t cayenne pepper

1 cup shredded white cheddar cheese
1/2 cup thinly cut spinach
1/2 cup shredded romaine lettuce
1 avocado, diced
diced tomato
diced cucumber
cilantro

Tortillas (I use Ezekial sprouted grain tortillas), but you can use whatever.  If you use the sprouted flourless kind I recommend filling the tortilla with cheese, folding it in half and pan frying it on both sides for about 5 minutes each side.  Flourless (or other GF tortillas) aren’t as soft and pliable as regular flour tortillas if you don’t do this.

Fill each tortilla with cheese, the golden star tofu cubes, about 1/2 cup of coleslaw, and any of the other toppings you choose.  Yummy!
